Sauce:
1 ˝ Cup butter
Juice of 4 limes
˝ Cup soy sauce
1 ˝ Cup tamarind paste
1 Cup chopped apple
4 Tbls currants
4 cloves garlic minced
4 shallots peeled and minced
1 tsp ginger juice
Melt butter until it turns golden brown. Set aside. In a medium sauce pan,
bring lime, soy, tamarind paste to a boil. Add the apple, currants, garlic and
shallots. Simmer for 10 minutes. Slowly whisk in browned butter until it
emulsifies. Squeeze in fresh ginger juice.
