Step #1
3 pounds of beef in cubes
5 cups red wine
1 Tbls. crushed black pepper
1/8 C. brandy
Salt
½ C. chopped parsley roughly chopped
2 cloves crushed garlic
Marinate for 12 hours

Sauté:
2 carrots sliced
2 onions sliced
Bouquet garni (thyme, bay, leek, celery)
Step #3
Sauté 8 oz. Bacon until crisp, drain oil and set aside
Sauté:
¼ cup pearl onions
4 Tbls. Butter
1-pound button mushrooms
Set aside until beef is cooked and then add above ingredients

Strain liquid from beef, sauté in ¼ cup flour, and add 1 Tbls. tomato
paste, 3 quartered tomatoes, add red wine back in, add onions, carrots and bouquet
garni.
Bake in the oven for 45 minutes.
Broth may need thickening.
