Sea Bass with Buttery Tomato Sauce and Arugula Pesto

Buttery Tomato Sauce

1 quart grilled tomato puree (strain through china cap
2 Tbls minced garlic
1/3 cup virgin olive oil
1/3 cup lemon juice
1 diced onion sautéed in butter
Pinch of saffron
Sliced fennel

Sauté onion and garlic in butter add fennel and sauté 10 minutes. Add tomato, lemon juice and olive oil.
Simmer 10 minutes add salt and pepper.

Place sauce under grilled or sautéed sea bass or halibut.
Top with Arugula pesto.

Olive oil
Dry Jack Cheese
Garlic
Pine nuts
Lemon juice
