1/2 large yellow onion
1 tsp garlic
8 small yellow tomatoes
1 1/2 cups chicken or fish stock
2 Tbls unsalted butter
1 Tbls. Lemon Juice
2 Tbls Orange Juice
Rough chop onion and tomatoes. Place in a sauce pan with chopped garlic and
cover with stock. Boil until very tender. About 30 minutes.
Place in a blender or food processor and blend until smooth. Add lemon and
orange juice and salt and pepper.
Strain through medium mesh strainer and place in a sauce pan. Whisk in whole
butter until sauce in smooth a glossy.
Serve with your favorite fish or chicken. |
